Zucchini Gratin
Serves 8-12

1 T fresh garlic, minced
1/4 c olive oil
1/2 tsp black pepper
1 tsp salt

5 medium zucchini (or summer squash) sliced thin   
1 onion, sliced thin
2 tomatoes, sliced thin

1/2 c parmesan cheese

Mix the first four ingredients together and toss with the sliced veggies.  Layer the veggies in an 8" square greased pan, pressing them down to create a flat top.  Sprinkle with parmesan cheese.  The pan will be full.  Bake 15 minutes at 375F, remove from oven and cover with foil and continue to bake 1 hours more.  Let cool 10 minutes and then press another pan or plate down on top of the foil and tilt over the sink and drain as much excess liquid as possible.  Remove foil and cut into portions and serve.
