When I have too many over ripe bananas, I will put them in the freezer, still in their skin, to use in smoothies. I created this dish when I had too many bananas in the freezer and a bunch of bananas that were too ripe to eat out of hand.
Even my kids will eat bananas fixed this way.
Yield: 4 servings
2 T canola oil
4 bananas, peeled and sliced into 1/2 inch thick slices
Heat oil and butter together until butter starts to sizzle, but not brown. Add sliced bananas and sauté for 3-4 minutes.
2 T orange juice
Add rest of ingredients and continue stirring until the brown sugar is melted and the ingredients are blended together.
Hint: This would be very tasty served over peanut butter pancakes or waffles.
