Stir-Fried Fresh Garden Veggies
Serves 4 

1 zucchini or yellow squash, halved lengthwise, then sliced slightly on an angle

1 onion, halved and sliced length wise into “planks”

1 c snow or sugar snap peas or green and yellow beans

2 c broccoli flowerets

˝ tsp minced fresh garlic

1 tsp grated fresh ginger (optional)

2 T peanut oil

2 T soy sauce


In a wok or skillet, heat the peanut oil until fragrant, add the garlic and optional ginger, stirring quickly.  Add the fresh veggies and stir-fry for 2 minutes.  Add the soy sauce and stir fry one more minute.  Serve.

Grilling option:  toss everything together and let the veggies marinate for 10 minutes before grilling them for 5-6 minutes over medium high heat.
