Poultry Brine

Brining makes a wonderful, juicy bird.  Remember to use only a fresh, natural and minimally processed, non-self-basting or non-brine injected bird.   Though brining a large turkey requires 2 days, even a day marinating in the brine will improve the moistness of the bird. 

How long to brine:

Whole chicken (4 pounds)        4-12 hours
Whole turkey                            1-2 days
Turkey breast                           5-8 hours

Poultry Brine Recipe

c kosher salt (no other)
c sugar
1 gallon cold water
1 T black pepper
1 T poultry seasoning
1 tsp garlic powder (opt)
1 tsp onion powder (opt)

 Mix ingredients together until the salt dissolves.  Place rinsed turkey in a large plastic or stainless steel container and cover completely with brine.  Place in refrigerator for the time required according to chart above.  Rinse poultry well and discard brine.  Proceed to roast poultry according to recipe.  Do not salt a brined turkey before roasting.
