Onion & Red Pepper Spread

This is a low fat, high flavor spread that works well as a dip for vegetables as well.

Yield: approx. 1 1/2 c

2 batches caramelized onions
1 7 oz jar roasted red peppers, drained
4 pieces marinated artichoke hearts
1/2 tsp fresh minced garlic
1/2 tsp dried oregano
1 tsp olive oil
1/2 tsp salt
1/4 tsp fresh cracked black peppercorns

Place all ingredients in a food processor and blend until smooth.

This spread would go very well on the Mediterranean Ham and Cheese Wrap in place of the seasoned mayonnaise.
