Lemony Fennel Salad

This wonderful, crisp and refreshing salad was created and generously given to me to share with you from a good friend of mine Todd.  Enjoy!

1 fennel bulb, thinly sliced* (3 c)
1 small onion, thinly sliced (1 c)
4 tender celery ribs from the heart, thinly sliced, including the leaves (1 c)

Place vegetables in a bowl. Toss with a half batch of Lemon Vinaigrette.  Adjust the amount of dressing and seasonings to taste. Serve.


*cut the tops off, reserving the feathery fronds for garnish.  Cut the bulb in half and remove core before slicing
