There are several shows (Oct 22, 29, Nov 5 12, 19, 2007) that cover how to organize, plan and execute a large meal (that you can also go to and not just work it!), so I didn't cover that here.  I just wanted to share with you what I did for my son's high school graduation party.  (The new recipes that I mentioned are hyperlinked, so all you need to do is click on the name of the recipe and it will pop up) 

 

Graduation party: theme- orange and black-

·         Orange marigolds, blackie sweet potato vine and black-eyed Susan vine in  pots that flank the front stairs

·         Bunches of black and orange balloons- too windy to be outside, but added fun to the different rooms inside

·         DJ- worth EVERY dollar!!! Set the atmosphere and since the kids were inside and outside, there was music every where.

·         3rd floor game room- ping pong, foose ball, air hockey table

·         Bonfire

·         Badminton

·         Frisbee

·         Football

·         Corn hole

·         Dining room done in black with vivid orange accents

- Orange marigolds in black pots on top of round mirrors

-orange and black marde gras beads

-black and orange napkins

-black plates and forks

-orange cups

 And tons of food!!!:

 Chicken wings 3 ways-

  1. Teriyaki- just thicken commercial with a cornstarch slurry
  2. Apricot Ginger- straight from my website
  3. Kicked up BBQ-- new recipe!

 

Full sheet pan pizzas-

-took canned pizza sauce, heated it up with fresh garlic, some dried Italian herbs and some minced fresh oregano.  Another thing we did was to thin the sauce down quite a bit with water- too pasty- made a fresher, lighter tasting sauce

-cheese- 2 parts provolone to 1 part mozzarella- great flavor and doesn’t ooze when you cut it

-used non-deli meats- grilled ham steaks, thick sliced bacon, rope Italian sausage- thick sliced, lean hamburger meat, stick pepperoni- thick sliced, grilled chicken breast

-lots of toppings- all the meats, green and red pepper slices, onion, black olives, mushrooms, sliced tomato- mixed and matched ingredients for different variations for each pizza- since they were full sheets, we did ½ one flavor, ½ another flavor

 

Deep dip pizzas-

  1. Chicken Ranch- creamy buttermilk ranch + grilled chicken, bacon, tomato, mozzarella, provolone- the hit of the party!!!
  2. veggies- loaded with green & red peppers, black olives, onions, mushrooms, tomatoes, mozzarella, provolone

-chips w/salsa and queso dip-

- took bottled salsa and added fresh cilantro, fresh garlic and the juice of a lime and the taste went from acidic to a noticeably fresher taste- lost the canned, pasty taste      

- queso dip- new recipe!

 -Fresh fruit- watermelon, honeydew, cantaloupe, strawberries, pineapple and for fun- a fresh coconut- easy to work with

-Crudités- fresh veggies served…… w/creamy buttermilk ranch- used the same recipe on the chicken ranch pizza

-cheese straws- puff pastry dough rolled out with parmesan cheese and Italian herbs, cut into ½ inch strips, twisted and baked- something light and flaky and fun

-white cake cupcakes- just set the cupcakes directly on the table, using non-written on cupcakes between the words "Congratulations Zac & the class of 2008!"

-keg o’ root beer- kids loved!!!!!!!!!!!

-strawberry lemonade

-black and orange M&M’s

-s’mores for the bonfire
