Creamy Turkey & Wild Rice Soup

This is a quick throw together soup that highlights using up Thanksgiving leftovers.  The turkey stock can easily be made with the turkey carcass and most leftover veggies, including the leftover greenie beanie casserole (after the onion topping has been removed) can be add last minute after the half and half or heavy cream has been added and the seasoning adjusted.

Combine turkey stock with turkey meat, fresh chopped onion and leftover cooked wild rice (rice blend, etc.), add half and half or heavy cream, season to taste with salt and pepper and finish off with any leftover veggies.
