This yields a very moist and tender chicken that takes a little planning ahead because the cedar plank needs to soak for at least 4 hours. The rest of the recipe is very basic to follow. If you don't have to cedar planks, cook part of the chicken on the plank and the rest directly on the grill and see what difference you think the cedar plank makes.
2 untreated cedar planks
Non-stick oil spray or 2 T vegetable oil
1 large chicken cut into 8 pieces
½ c Balsamic Vinaigrette Dressing
Immerse planks in water, placing a weight on top of each plank to keep it submerged. Soak at least 4 hours or overnight.
Mix Balsamic Vinaigrette Dressing, honey, mustard, cumin and black pepper together.
Preheat grill to medium heat. Remove planks from water; spray or brush tops with the oil. Place ½ of the chicken on each plank and place on grate of grill and cover with lid or foil.
Grill 30 minutes before basting with the salad dressing mix, cooking up to 45 minutes more.
