This is a great light salad dressing that works well as a marinade too.
Makes 2/3 c
Place all of the above ingredients in a food processor or blender.
1/3 c olive oil
With the machine running, slowly drizzle in the olive oil, to create and emulsified dressing.
2 T minced fresh chives or choice of other fresh herb (opt.)*
Stir in fresh herbs.
*to substitute dried herbs for fresh herbs; use 1/3 the amount of dried to fresh in a recipe
Hint: you can mix everything together with a whisk or spoon, but by emulsifying the dressing, the vinegar and oil won’t separate as easily and the dressing is smoother.
