Aunt Judy's Authentic SW Salsa

Yield:  approx. 10 pts

 4 qts peeled and crushed tomatoes
1 c chopped fresh jalapenos- or peppers of choice
2 c chopped onion
1 tsp salt
1 T minced fresh garlic
2- 12 oz cans tomato paste
c minced fresh cilantro (opt)

Mix ingredients together.  Taste for saltiness, cilantro level and heat.  (This requires at least 1/2 a bag of tortilla chips) Adjust seasonings if necessary.

Fill pint jars according to canning instructions and process 40 minutes in a water bath or 10 minutes @ 5# pressure in a pressure canner.
